Don’t you just love the warm weather that we have been having lately? Okay, I know not all of my readers are from my neck of the woods, but we are having a pretty warm spring over here in Oregon and I love it! We are expecting a week of 80+ degree weather and I am all about it! With summer like weather, comes summer like recipes for our crew. Ice cream, fruit salad, refreshing iced tea, tasty drinks and all of those other yummy things come to mind.
In addition, I am trying to get rid of a little (okay…a lot) of extra weight before real summer hits so I am loving any chance I can get to eat treats without lots of added sugar and junk, that’s why when I got a sweet deal on some berries and bananas, I decided to make a tasty, healthier version of everyone’s favorite summer treat. Ice Cream! That’s right, my friends, I put together this simple homemade strawberry banana ice cream with just 3 ingredients!
It’s so easy, it may just become your new go-to dessert this summer!
Are you an ice cream fan? I’m a sucker for a good bowl of ice cream, but to be honest, I’m afraid of eating just about any of them because of my inability to eat gluten. I am terrified of those nasty migraines so for me it just works better to make my own treats. Plus, I can feed this ice cream to my kids without worrying about all of those additives, preservatives, artificial colors or flavors, or any of those other I can’t even pronounce the name type of ingredients.
I already mentioned how this was good for me to eat since I don’t have to worry about any hidden gluten, but this is a great recipe for many types of diets. This is a great vegan ice cream recipe, as well as a dairy free frozen treat! It works for just about everyone!
I love strawberries, they are hands down my favorite berry and have been since I was a small child. They are what I like to think of as nature’s candy. I also love iced tea (in case you hadn’t seen my Blackberry Tea recipe, I basically live on iced tea during the summertime) so I am always looking for ways to use them! Here is what I did to make this delicious and refreshing beverage:
First, combine the 2 cups of fresh strawberries and 3/4 cup Sugar. Stir together and either mash or puree in a food processor. My family prefers to taste the fruit pieces in our drink so I typically just mash ours with our fruit masher.
I don’t live in the south, of course, but I love me some good southern style iced tea. Although I am not big on super sweet beverages though, so you may want to add more sugar to your tea than I have here in my recipe. I also think that all good teas deserve to be served in a mason jar because, well, they just taste better that way! I bought this case of Kerr Mason Jars a while back specifically for our iced tea drinks.
With summertime fast approaching, I am very excited for our family summertime BBQs. During our BBQs we always serve either this tea or the Blackberry Iced Tea (depending on how late into the Summer it is) and they are both always a hit.
