Don’t you just love the warm weather that we have been having lately? Okay, I know not all of my readers are from my neck of the woods, but we are having a pretty warm spring over here in Oregon and I love it! We are expecting a week of 80+ degree weather and I am all about it! With summer like weather, comes summer like recipes for our crew. Are you an ice cream fan? I’m a sucker for a good bowl of ice cream, but to be honest, I’m afraid of eating just about any of them because of my inability to eat gluten. I am terrified of those nasty migraines so for me it just works better to make my own treats. Plus, I can feed this ice cream to my kids without worrying about all of those additives, preservatives, artificial colors or flavors, or any of those other I can’t even pronounce the name type of ingredients.
